When I was growing up my parents were always on a pretty strict budget, like really strict. One of the places they cut back was buying margarine instead of butter. They did buy one box of butter at Christmas time and my mom even let us eat a tiny slice of cold butter plain! Yep, just a little slab of butter!

After I got married, I bought a couple of boxes of margarine to use in my baking. Um, that was not the right thing to do! I was married to a dairy farmer and margarine wasn’t allowed in our house. I’ve never owned a box of margarine since! Lucky me!

I’m totally in love with butter in all it’s flavors, shapes, and varieties. But, Homemade whipped butter is kind of one of my very favorite ways to enjoy it! It’s soft, spreadable, and fluffy!

The ingredients are real sweet butter and milk that’s whipped until it’s fluffy and light. It has lots of air incorporated into it.

Butter vs. Whipped Butter. Whipping adds air to the butter and makes it lighter, so it has fewer calories and fat than regular butter.

Like I said, whipped butter can be used in so many different ways. But, if you’re wondering if you can use it for baking and cooking the answer is NO.

  • It melts too fast and is too fluffy to cook with.
  • It’s less dense than a stick of regular butter so it can’t be measured the same for baking. Use regular sticks of butter for baking

For this recipe, you can use either salted or unsalted butter. It’s a personal preference. I always buy salted butter because I’m a salt addict!

  1. Soften Butter. How? The best way to do that is to let it rest at room temperature for 30 minutes.
  2. Add butter and milk to a mixing bowl. I recommend an electric mixer. A stand mixer is even better! Whole milk, or 2% milk is best.
  3. Whip milk and butter with a paddle attachment on medium speed for 2 minutes.
  4. Keep whipping switch to a whipping attachment and beat on medium-high speed for 2-4 more minutes, until fluffy.

  • In the fridge – butter will last up to two weeks
  • How to make butter soft and spreadable – let it sit at room temperature for 30 minutes before serving
  • How long can butter stay out– I’ve left it out for up to three hours before
  • Can I freeze butter– yes! Whipped butter can be frozen for up to three months. Thaw in the refrigerator.

Ingredients

  • 1/2 cup butter must be real butter, room temperature
  • 2 Tbsp milk whole or 2%

Instructions

  • Make sure butter is room temperature. The best way to soften butter is to let it sit at room temperature for 30 minutes.

  • Add butter and milk to a stand mixer, or a mixing bowl.

  • Using a paddle attachment mix butter on medium speed for 2 minutes. Scrape sides of the bowl.

  • Using a wire whisk attachment, turn the mixer to medium-high speed and continue mixing for 2-4more minutes or until light and fluffy.

Notes

NOTE: The volume of the butter will increase as air is incorporated into it.

NOTE: Whipped butter doesn’t measure the same as unwhipped butter, and shouldn’t be used for baking or cooking.

NOTE: Store leftover butter in the fridge for up to two weeks, or in the freezer for up to three months.

NOTE: Let butter sit at room temperature for 30 minutes before serving. ti will become soft and spreadable.
