Vegan Classic Mashed Potatoes

One of my favorite dishes on the holiday table is mashed potatoes. I mean, they are the ultimate comfort food! My perfect Thanksgiving plate usually looks like one half mashed potatoes, one half a combination of stuffing, brussels sprouts, cranberry relish, and sweet potatoes! And then finish it all off with a slice of apple pie. The good life! My classic mashed potatoes are just like you remember them—a little bit creamy, a little bit chunky, and full of garlic. So delicious!

Dairy Free Mashed Potatoes

I keep my classic mashed potatoes dairy free by using olive oil instead of butter, and unsweetened non dairy milk. So delicious! Last year we hosted Thanksgiving and I was determined to track down some Oatly for the mashed potatoes. You know, before you could find Oatly in the grocery stores! I ended up purchasing it by the cup from the Nordstrom coffee shop. Yep, I brought home a paper coffee cup filled with Oatly! I wonder what that barista was thinking! Unsweetened almond milk would also be great if you don’t need to keep them nut free, and my old standby is unsweetened soy milk!

Whipped or Mashed?

Each year for family holidaysThanksgiving, Christmas, and Easter—my mom and I make separate mashed potatoes. She gets a huge bag of potatoes, we boil them up in a giant pot, and then divide them up to finish them off in our own style. My mom always whips her potatoes—she actually puts them in her mixer with melted butter and cream. I always sway far in the other direction and load mine up with garlic, and leave my potatoes pretty chunky.

But, because they are easy, you can also incorporate into any regular weeknight meal—I have been know to pair them with frozen Gardein chik’n tenders to serve them up like a classic TV dinner—true story!

Classic Mashed Potatoes

Classic mashed potatoes with a decadent onion gravy! Fancy enough for Thanksgiving, easy enough for every day.

Ingredients

Mashed Potatoes

  • 3 pounds yukon gold potatoes
  • 2 T olive oil
  • 4-6 garlic cloves
  • 2 T nutritional yeast
  • 1 t salt
  • 1 c non dairy milk unsweetened plain

Instructions

For the Potatoes:

  • Peel potatoes (optional) and dice them into 1 inch cubes.

  • Place them in a large pot of room temp water. Once all of the potatoes are peeled and cut place the pot over high heat and bring to a boil. From start to finish it took me 20 minutes to get the potatoes onto the stove and cooked to be fork tender.

  • While the potatoes are cooking, begin the gravy, directions below.

  • Once the potatoes are fork tender drain them and return the empty pot to the stove over low heat.

  • Add the olive oil and garlic to the empty pot and lightly brown the garlic.

  • Mix in nutritional yeast and salt and mix well. It will become a thick paste.

  • Slowly stream in the milk while stirring and mix until well incorporated.

  • Add potatoes on top and mash until desired consistency.

  • Serve with gravy, and enjoy!
