Some of you might remember that early last year I went through a period where I was conscious of watching my carb intake.

It is no secret that I love carbs.

I don't have an issue with sweets, but give me bread, crackers or chips, and I'm going to indulge way more than I should.

When I did this, I lost about 18 pounds in a relatively short time frame.

And I kept it off, with exercise, until Thanksgiving.

In the months between Thanksgiving and my sons birthday in February, life got crazy. I got sick from a mold issue that we didn't discover until it was too late in a home we were staying in.

I stopped working out.

And I let myself go on celebration yumminess.

I assumed it was merely holiday weight and it would work itself out once my diet returned to normal and I started exercising again.

Oh but no! (Thank you, being over 45.)

Since I'm uncomfortable with the weight gain, I've decided to get serious about keeping my carbs lower.

I find that when I focus on sufficient (but not high) protein, a ridiculous about of vegetables in my diet, and good fats, I am less hungry.

And I almost never get hangry when I eat this way.

With salty feta and a crispy crust topped with Tzatziki Sauce, this is going to be one that you crave time and again.

Tip For Making Zucchini Fritters:

Like all fritters, these Zucchini Fritters can be a little tricky to cook. The key is to have your pan on about medium. (Depending on your stove and pan.) You want them to start firming up and the edges to show browning before you attempt to flip them.

When you are ready to flip, carefully nudge your spatula under the fritters and then quickly flip.

If they fall apart slightly, just reshape them with the back of the spatula.

Ghee is butter that has been simmered over low heat to separate and remove the milk solids. The process of making ghee is similar to that of making clarified butter, but ghee is cooked longer. Ghee is cooked until the milk solids start to caramelize, which gives it its luscious nutty aroma.

  • Ghee has a higher smoke point than butter, making it an excellent option for high-heat cooking. The smoke point of ghee is close to 500 degrees.
  • Since the milk solids have been removed, it has little to no lactose or casein. Some people who have lactose sensitivities can tolerate ghee.
  • Ghee does not need refrigeration.
  • Excellent source of medium- and short-chain fatty acids, which are associated with reduced risk of heart disease.
  • Grass-fed ghee is a good source of CLA, which is believed to be anti-inflammatory.

Ingredients

  • 2 medium zucchini or 1 large, grated
  • 1 teaspoon sea salt divided
  • 3 ounces feta optional
  • 4 scallions sliced thin
  • 1 jalapeño seeded and chopped
  • ¼ cup fresh chopped chives
  • 2 cloves garlic minced
  • 1 large egg beaten
  • ½ cup almond flour or gluten free flour blend
  • 2 teaspoons baking powder
  • ½ teaspoon fresh ground black pepper
  • Ghee for frying or oil
  • Tzatziki Sauce for serving

Instructions

  • Place zucchini in a colander placed over a plate. Sprinkle well with ½ teaspoon of salt and allow to sit for 20 minutes.

  • In a medium bowl, combine zucchini, feta, scallions, jalapeno, chives and garlic.

  • Stir to combine and then add egg, almond flour, baking powder, remaining salt and pepper. Stir to combine.

  • Heat ghee in a large skillet. Using ¼ cup measure, drop mounds into skillet. Press to flatten.

  • Cook 7-10 minutes per side, until crisp, adding more oil as needed.

  • Drain on paper towels and serve with Tzatziki sauce.

  • Substitute cilantro for the chives.
  • For a lower carb and keto friendly option, choose Homemade Baking Powder.
  • Add in ½ cup corn kernels to make zucchini corn fritters.
